Instructions:
1. Preheat Oven:
Preheat your oven to 400°F (200°C).
2. Season Chicken & Potatoes:
In a large bowl or directly in a baking dish, toss the potato chunks with:
2 tablespoons olive oil
Half of the seasoning mix: paprika, garlic powder, onion powder, thyme, salt, and pepper
Place the seasoned potatoes in a 9×13-inch baking dish or sheet pan.
Rub the chicken pieces with the remaining oil and seasoning. Nestle them into the potatoes in the dish.
3. Add Garlic & Extras:
Scatter garlic cloves, and any onions or peppers if using, over the top.
4. Bake:
Bake uncovered for 45–55 minutes, or until:
Chicken is cooked through (165°F/74°C internal temp)
Skin is crispy and golden
Potatoes are fork-tender and slightly crispy at the edges
If the skin isn’t crisping enough, broil the dish for 2–3 minutes at the end — but keep an eye on it!
5. Garnish & Serve:
Sprinkle with chopped fresh parsley or green onions for a pop of color and flavor.

Variations:
Cheesy Version: Sprinkle shredded mozzarella or cheddar over the potatoes during the last 10 minutes of baking.
Creamy Version: Mix ½ cup of sour cream or cream of chicken soup with the potatoes before baking.
Spicy Kick: Add a pinch of cayenne or a drizzle of hot sauce to the seasoning.
