Ingredients:
– 1 lb ground beef or pork
– 1 lb bean sprouts, trimmed
– 1 large green bell pepper, sliced
– 2 cloves garlic, minced
– 1 tablespoon soy sauce
– 1 tablespoon oyster sauce (optional, but adds depth of flavor)
– 1 teaspoon sesame oil
– 1/2 teaspoon chili garlic sauce (or to taste)
– 1 tablespoon vegetable oil
– Salt and pepper to taste
Instructions:
1. Prepare the meat: Heat vegetable oil in a wok or large skillet over medium-high heat. Add the ground meat and cook, breaking it up with a spatula, until browned. Drain off any excess fat.
2. Sauté aromatics: Add minced garlic and cook for about 30 seconds, until fragrant.
3. Add vegetables: Add the sliced bell peppers and cook for 2-3 minutes, until slightly softened.
4. Stir-fry bean sprouts: Add the bean sprouts and stir-fry for 1-2 minutes, until they are just tender-crisp. Do not overcook, as they will become mushy.
5. Season and finish: Stir in soy sauce, oyster sauce (if using), sesame oil, and chili garlic sauce. Season with salt and pepper to taste. Cook for another minute to allow the flavors to meld.
6. Serve: Serve immediately over rice or noodles.
