Here’s a simple, clear recipe to make exactly what you see on the plate.

Ingredients (1 serving)

  • 2 sausages (pork or chicken)

  • 1 large egg

  • 6–8 cherry tomatoes (on the vine if possible)

  • 4–5 mushrooms, sliced

  • 1 medium potato (or a handful of hash browns)

  • 1 tbsp cooking oil or butter

  • Salt & black pepper (to taste)

  • Optional: garlic or herbs (thyme/rosemary)

Instructions

1. Cook the Potatoes

  • Peel and grate or thinly slice the potato.

  • Heat a pan with a little oil.

  • Fry until golden and crispy on both sides.

  • Season with salt and pepper. Set aside.

2. Cook the Sausages

  • In the same pan, add sausages.

  • Cook on medium heat, turning often, for 10–12 minutes until browned and cooked through.

  • Remove and keep warm.

3. Fry the Mushrooms

  • Add a little butter or oil to the pan.

  • Add sliced mushrooms.

  • Cook until soft and browned (5–7 minutes).

  • Lightly season with salt.

4. Cook the Tomatoes

  • Add cherry tomatoes (still on the vine if you like).

  • Cook gently until skins blister and soften.

  • Sprinkle with a little salt.

5. Fry the Egg

  • Add a little oil or butter.

  • Crack in the egg.

  • Fry until whites are set and yolk is still runny (or cook to your liking).

  • Season with black pepper.

6. Serve

  • Arrange potatoes, sausages, mushrooms, tomatoes, and egg on a plate.

  • Serve hot with toast if desired ☕🍞
