Directions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the melted butter, granulated sugar, brown sugar, vanilla extract, milk, and egg until well combined.
In another bowl, sift together the flour, baking powder, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
While the muffins are baking, prepare the topping by mixing the 1/4 cup of granulated sugar with 1 teaspoon of cinnamon in a small bowl.
When the muffins are done, let them cool for a few minutes in the pan, then remove them to a wire rack.
Brush the tops of the warm muffins with the melted butter and then dip them into the cinnamon sugar mixture to coat.
Serve warm and enjoy!
Variations & Tips
For a fun twist, try adding a handful of mini chocolate chips to the batter for a chocolatey surprise. If you have a nut allergy in the family, consider using a nut-free butter alternative. You can also make these muffins gluten-free by using a 1:1 gluten-free flour blend. For a healthier version, substitute half of the all-purpose flour with whole wheat flour and reduce the sugar slightly. These muffins are versatile and can be adapted to suit your family’s tastes and dietary needs.
