Cook the Eggs:
Pour the eggs into the pan.
Let them sit for a few seconds, then slowly stir with a spatula.
Gently push the eggs from the edges to the center.
Continue slowly stirring and folding until they start to set but are still soft and slightly runny.
Finish:
Remove from heat just before they’re fully cooked (they’ll continue to cook slightly from residual heat).
Season with salt and black pepper.
Garnish and Serve:
Top with chopped green onions or chives.
Serve hot with toast or as-is!
