Hasselback Eggplant with Garlic & Herbs

Ingredients:

2 medium eggplants

3–4 cloves garlic (sliced thin or minced)

2–3 tbsp olive oil

Salt to taste

Black pepper to taste

1 tsp dried oregano or Italian herbs

Fresh parsley or cilantro (for garnish)

Optional: grated cheese, chili flakes, lemon juice

Instructions:

Preheat the oven to 200°C (400°F).

Prepare the eggplants:

Wash and dry the eggplants.
