Ingredients (1 serving)

2 sausages (pork or chicken)

1 large egg

6–8 cherry tomatoes (on the vine if possible)

4–5 mushrooms, sliced

1 medium potato (or a handful of hash browns)

1 tbsp cooking oil or butter

Salt & black pepper (to taste)

Optional: garlic or herbs (thyme/rosemary)
Instructions
1. Cook the Potatoes

Peel and grate or thinly slice the potato.

Heat a pan with a little oil.

Fry until golden and crispy on both sides.

Season with salt and pepper. Set aside.
2. Cook the Sausages
-
In the same pan, add sausages.

Cook on medium heat, turning often, for 10–12 minutes until browned and cooked through.

Remove and keep warm.
3. Fry the Mushrooms

Add a little butter or oil to the pan.

Add sliced mushrooms.
-
Cook until soft and browned (5–7 minutes).

Lightly season with salt.
4. Cook the Tomatoes

Add cherry tomatoes (still on the vine if you like).

Cook gently until skins blister and soften.
-
Sprinkle with a little salt.
5. Fry the Egg

Add a little oil or butter.
-
Crack in the egg.
-
Fry until whites are set and yolk is still runny (or cook to your liking).

Season with black pepper.
6. Serve

Arrange potatoes, sausages, mushrooms, tomatoes, and egg on a plate.
