Zest of ½ lemon (optional, for brightness)
A few strips of roasted red pepper or sun-dried tomato (optional, for extra color and depth)
1 sterilized glass jar with tight-fitting lid
Instructions
1. Cube the Feta
Cut the feta into 1-inch cubes using a sharp knife. Go slowly to avoid crumbling, especially if your feta is soft.
2. Prep the Flavorings
Rinse and dry fresh herbs if using.
Thinly slice the garlic.
Zest the lemon gently, avoiding the bitter white pith.
3. Layer in the Jar
In your clean, sterilized jar, begin layering:
A few cubes of feta
A pinch of herbs and spices
Some garlic, lemon zest, and peppercorns
Repeat until all ingredients are used.
4. Add the Oil
Slowly pour the olive oil into the jar, letting it fill all the gaps and fully submerge the cheese. You may need to tap the jar gently to release air bubbles.
5. Seal and Store
Seal the jar tightly and place in the fridge. Let it marinate for at least 24–48 hours before using. The longer it sits, the more flavorful it becomes.
Tips for Success
Use high-quality feta – firm Greek or Bulgarian styles work best.
Make sure the cheese is fully submerged in oil to prevent spoilage.
Always use a clean spoon when serving to avoid contamination.
You can reuse the infused oil in salad dressings or dips!
Serving Ideas
Add to Greek salads or grain bowls
Serve with olives and pita for a Mediterranean appetizer
Spread on toasted baguette slices with fresh herbs
Crumble over roasted vegetables or pasta dishes
Storage Notes
Keep refrigerated for up to 3 weeks.
Bring to room temperature before serving to soften the cheese and allow flavors to shine.
Discard if any signs of mold or unpleasant odor develop.
