Mexican Tortilla Pinwheels

Optional Add-Ins:

Chopped pickled jalapeños for heat

Diced cooked chicken or taco meat for a heartier version

👩‍🍳 Instructions
1. Make the Filling
In a large bowl, mix together:

Cream cheese

Sour cream

Cheese

Bell peppers

Olives

Corn

Green onions

Cumin, chili powder, garlic powder, salt & pepper

Mix until fully combined and creamy.

2. Assemble the Pinwheels
Lay out a tortilla on a flat surface.

Spread a generous layer of filling over the entire surface.

Roll the tortilla up tightly from one end to the other.

Repeat with the remaining tortillas.

3. Chill
Wrap each rolled tortilla in plastic wrap.

Chill in the fridge for at least 1 hour (or overnight) to firm up for easier slicing.

4. Slice & Serve
Unwrap and slice each roll into 1/2 to 1-inch pinwheels.

Arrange on a platter and serve cold.
