Step 4: Add Butter & Aromatics

Reduce heat to medium.

Add butter, thyme, and garlic to the pan.

Tilt the pan slightly and spoon the melted butter over the steak continuously for 1–2 minutes.

Step 5: Check Temperature & Rest

Use an instant-read thermometer:

Rare: 120–125°F (remove at 120°F)

Medium-Rare: 130–135°F (remove at 130°F) ← ideal for ribeye

Medium: 140–145°F

Transfer to a cutting board or plate.

Rest for 8–10 minutes, loosely tented with foil.
