Ingredients:
4 cups watermelon (seedless, cubed)
1½ cups sugar (adjust to taste)
2 tablespoons lemon juice
1 tablespoon lemon zest (optional)
1 tablespoon fruit pectin (optional, for thicker jam)
Instructions:
Prepare the watermelon:
Remove any seeds.
Blend or mash the watermelon into a smooth purée.
Cook the jam:
In a large saucepan, pour in the watermelon purée and bring to a simmer over medium heat.
Add sugar, lemon juice, and lemon zest if using.
Stir continuously to prevent burning.
