Ingredients
1 kg beef (one thick piece)
2 tbsp olive oil or butter
1½ tsp salt
1 tsp black pepper
1 tsp garlic powder (or fresh garlic)
1 tsp paprika
½ tsp dried thyme or rosemary (optional)
Step-by-Step Method (Very Important)
1️⃣ Bring meat to room temperature
Take beef out of fridge 30–45 minutes before cooking
➡️ This keeps it juicy.
2️⃣ Season well
Rub meat with:
Oil
Salt
Pepper
Garlic
Paprika
Herbs
Press seasoning into the meat.
3️⃣ Hard sear (this makes the crust)
Heat pan very hot
Add a little oil
Sear each side 2–3 minutes until dark brown
👉 Don’t move it too much
4️⃣ Finish cooking (key step)
Two options:
🔥 Oven (best)
Oven at 170°C
Put beef in oven 25–35 minutes
Internal temp ≈ 70–75°C (well done but juicy)
🍳 Pan + lid
Lower heat
Cover pan
Cook slowly 20–30 minutes, turning once
5️⃣ REST THE MEAT (DO NOT SKIP)
Remove from heat
Cover loosely with foil
Rest 10–15 minutes

6️⃣ Slice correctly
Slice against the grain
Medium thickness (not too thin)
