Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or baking dish and set aside.
Step 2: Make the Meatloaf
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, garlic, Worcestershire sauce, Italian seasoning, smoked paprika (if using), salt, and pepper.
Mix everything together until well combined, but be careful not to overwork the meat.
Shape the meat mixture into a loaf shape and place it in the prepared loaf pan.
Spread the 1/2 cup of ketchup evenly over the top of the meatloaf.

Step 3: Bake the Meatloaf
Bake the meatloaf in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
Remove the meatloaf from the oven and let it rest for about 10 minutes while you prepare the mashed potatoes.
Step 4: Make the Mashed Potatoes
While the meatloaf is baking, boil the diced potatoes in a large pot of salted water until they are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Add the butter, milk (or cream), salt, and pepper. Mash the potatoes until smooth and creamy. Adjust seasoning to taste.
Step 5: Assemble and Add the Cheese
Once the meatloaf has rested, spread the mashed potatoes evenly over the top of the meatloaf.
Sprinkle the shredded cheddar cheese on top of the mashed potatoes.
Step 6: Broil for a Crispy Topping
Turn on the oven broiler and place the meatloaf back in the oven for 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye on it to prevent burning.
Step 7: Serve
Remove the meatloaf from the oven and let it cool for a couple of minutes before slicing.
Serve the meatloaf with your favorite side dishes, such as steamed vegetables or a simple green salad.

Breadcrumbs: You can use regular or panko breadcrumbs, or even crushed crackers if you don’t have breadcrumbs on hand.
Meat Options: You can use a combination of ground beef and ground pork, or substitute ground turkey or chicken for a lighter version.
Cheese Options: Cheddar works great in this recipe, but you can also use mozzarella, Monterey Jack, or any cheese that melts well.
