Step 1: Prep & Season
Pat the steak dry with paper towels (wet = no sear!)
Generously season both sides with sea salt and black pepper
Let rest at room temperature 30–45 mins
👉 Dry surface + room temp = flawless crust.
Step 2: Preheat the Pan
Heat a heavy cast-iron or stainless steel skillet over medium-high heat until very hot.
Optional: Add 1 tsp oil to help prevent sticking.
Step 3: Sear the First Side
Place steak in the pan—it should sizzle immediately.
Sear undisturbed for 3–4 minutes, until deep golden-brown crust forms.
Flip and sear the other side for 3 minutes.
