Sausage and Vegetable Hotpot Recipe: Comforting and Traditional

Ingredients for 4 people
4 smoked sausages (Morteau, Montbéliard or Toulouse – approx. 400 g)
1/2 collard greens (approx. 500 g, in strips)
4 potatoes (approx. 400 g, floury flesh)
3 carrots (approx. 200 g, in sections)
2 leeks (approx. 200 g, white and light green parts)
1 onion (approx. 100 g, minced)
2 garlic cloves (crushed)
1 litre vegetable or poultry
stock 1 bouquet garni (thyme, bay leaf, parsley)
30 g butter or 1 tablespoon olive
oil Salt and ground black pepper

Optional:
100 g smoked bacon
1 pinch of Espelette pepper or smoked
paprika Chopped
fresh parsley Dijon or Savora
mustard Country bread or green salad
